Utilizing the ancient tradition of nixtamalization before beginning the distillation Abasolo draws out some of the most intense corn flavors of any whisky in the shop. Nixtamalizing is a washing process that has been done on maize for thousands of years to prepare it for cooking. The washing of kernals in an alkalie solution removes naturally occuring aflotoxins and allows the kernals to be ground more easily and worked into a dough when cooking. As an added benefit it enhances flavor. This fact is what makes for such a good whisky. Shockingly smooth and sweet – like biting into a perfeclty ripe cob seconds after you’ve picked it. Abasolo uses the finest, non-GMO, Cacahuazintle corn and the traditional knowhow to get the most flavor our of such well sourced ingredients.
