Bacanora has a complex legal history it was prohibited in Mexico from 1915 to 1992, which is why it remains a relatively obscure category despite centuries of production in Sonora. The denomination of origin was officially established in 2000, restricting production to 35 municipalities in Sonora. Agave pacifica grows wild in the rugged Sonoran landscape rather than being cultivated like the Blue Weber agave used for tequila the wild growth and the region’s volcanic soil contribute the earthy, mesquite-smoked character that distinguishes bacanora from the more polished expressions of other agave categories. Aguamiel (honey water in Spanish) references the sweet agave sap, reflecting the brand’s connection to traditional production.
