Avin traces its roots to Jess Mara in highland Jalisco, where the agave matures seven to ten years before harvest. A three-day slow roast draws out the agave’s natural sweetness, and the unaged bottling keeps that fresh, bright character front and center. The result is a clean, agave-forward silver that has been recognized at the San Francisco World Spirits Competition.
