Bacard Superior White Rum. Casa Bacard, Catao, Puerto Rico the original mixable rum, invented in 1862 by Don Facundo Bacard Mass in Santiago, Cuba, and the spirit that single-handedly created the modern light rum category through a proprietary charcoal filtration process still used today.

Don Facundo Bacard Mass arrived in Cuba from Spain in 1830 and spent the next three decades obsessing over rum. At the time, rum was a crude, harsh spirit the drink of sailors and laborers. Don Facundo changed that in 1862 when he introduced two innovations that redefined the category. First, he pioneered a parallel distillation method: two distinct spirits are distilled simultaneously an aguardiente at 150160 proof for body, and a redistillado at 185190 proof for lightness then blended before aging. Second, he developed a proprietary charcoal filtration process that passed the spirit through thirteen different types of charcoal in multiple stages, both before and after aging, stripping color and harsh congeners while preserving delicate flavor compounds. The result was the world’s first truly mixable rum.

Today Bacardi Superior is produced at Casa Bacardi in Catao, Puerto Rico the largest rum distillery in the world, sitting across the bay from Old San Juan. The rum is aged one to two years in American white oak ex-bourbon barrels before double-charcoal filtration for clarity. The result is a crystal-clear rum that retains just enough barrel character for depth without weight. 91 points from Tastings.com. Monde Selection Gold Medal. The Mojito, Daiquiri, and Cuba Libre were all popularized using Bacardi Superior as the base.
