The Balvenie remains one of the last Scottish distilleries to maintain its own floor maltings and a team of coopers on site the cooperage work enabling the precise selection and preparation of the port pipes used in this expression. The PortWood 21 Year is David Stewarts (the worlds longest-serving Malt Master) benchmark for port cask finishing at Balvenie chosen because 21 years of primary maturation provides enough structural complexity to benefit from port pipe finishing without being overwhelmed by it.
