Banhez is produced by Integradora Comercial de Ejutla, a co-operative of 36+ families in San Miguel Ejutla, Oaxaca, committed to sustainable, fair-trade mezcal made as it has been for nearly two centuries underground wood-fired pits, donkey-pulled stone tahonas, wooden-tank fermentation, and small-batch copper distillation. Pechuga (breast) has been consumed across Oaxaca on special occasions for centuries.
