All grapes are sourced from the Ica Valley and undergo full fermentation before small-batch distillation on a copper pot still, with no water or additives added.
Pisco is the protected Peruvian (and Chilean) grape spirit, with single-varietal expressions like the Italia showing the character of one specific grape variety. Italia pisco is among the most aromatic of the eight permitted pisco grape varieties distinguished by jasmine, floral, and sweet citrus aromatics. Barsol is one of Perus most respected pisco producers.
