Billecart Salmon Elisabeth Salmon Brut Rose 2012

Created in 1988 as a tribute to Elisabeth Salmon, one of the domaine’s founders, this cuve is set apart by its radiance, refined purity as well as unique character. It embodies with subtlety the signature of their top Pinot Noir and Chardonnay terroirs. Allowing time to play its role is behind the grandeur of this vintage cuve.

With soft, shimmering reflections and a sustained pink hue, this seductive blend has a radiant brilliance. There is a refreshing sensorial expression of citrus peel and red berry jelly. With the exquisite sensation of a rich and complex aromatic generosity (antique roses, cherries and white peaches). Harmonious maturing of flavours (mandarine, blood orange and Reinette apple tart). An ample and pure character, in the mouth unveiling a chalky edge and persistent finish of lightly candied citron. Ideal when paired with beautiful creamy poultry, in particular poulet de Bresse or Breton langoustines royales.

This has a lovely copper color with aromas of cloves, spiced apples, raspberries, gingerbread and pastries. Delicious yeasty and spicy undertones. Excellent density and focus, with fine and firm bubbles, yet its light on its feet and so fresh. Long, chalky and salty at the end. Chardonnay and pinot noir. 3.8g/L dosage. Drink or hold.

The 2012 Brut Ros Cuve Elizabeth Salmon offers up hints of red berry fruit, ginger, spice, rosewater, mint and crushed flowers. There is a feeling of classic austerity that runs through the 2012. I would prefer to cellar this for at least a few years, as it is quite reticent at this stage. Chalk, mint, white pepper and bright saline accents linger on the pointed finish. Dosage is 3.8 grams per liter. Disgorged: first trimester 2023.
