Jason Barber has farmed dairy cattle in West Dorset for generations. Facing the same margin pressures that make modern dairy farming one of the world’s most difficult agricultural businesses, he began experimenting with a radical idea: rather than letting the whey the liquid byproduct left after milk curds are used for cheesemaking go to waste, why not ferment it into a spirit? The question required years of research and a partnership with distiller Paul Arber to answer. The result, launched in 2012, was Black Cow Pure Milk Vodka a product that created its own category.

The production process is a feat of dairy science: fresh whole milk from Barber’s 250-cow herd is separated into curds and whey. The curds become cheese; the whey is fermented using a specially developed yeast that converts the milk sugar (lactose) into alcohol, creating what Barber calls a “milk beer.” This milk beer is then distilled to produce a base spirit, which is treated with a secret blending process, triple-filtered, and finished before being hand-bottled on the farm. The lactose fermentation a process fundamentally different from grain or potato fermentation is what creates the distinctive creamy character that makes Black Cow taste unlike any other vodka.
