The whisky’s nickname gives it away: the 16.3 was produced entirely from Concerto barley grown on the Church Field of Octomore Farm on Islay. It was malted to 189.5 ppm and the whisky was matured for 5 years entirely in Bourbon, Sauternes and Pedro Ximnez casks. The Octomore 16.3 was bottled at an impressive 61.6% vol. without chill-filtering and without the addition of colouring.
The nose is beautifully honeyed and floral, with sweet malt, graham, green apple, and that signature saltiness. The palate lets the malt shine, revealing rich orange blossom honey, lemon zest, Nilla wafers, sea salt, and an abundance of sweet coconut smoke tying everything together. The finish carries a bright, citrusy minerality as the smoke fades into a final note of salted apple barley.
