This region is famous for rich and elegant whites loaded with intense fruit flavours and creamy oak complexity. This is an exceptionally rare and prized wine – only made at 7 sites around the region – thats very tricky to get your hands on. Sebastien Christophe started with a small inheritance of just a couple parcels of Petit-Chablis and in a little over a decade he has managed to accumulate some prime plots throughout the appellation, including 1er and Grand Crus.
Tasting this wine is quite a journey. First, its got those lovely rich, intense fruit aromas that Chablis is famous for, with notes of tropical peach and pineapple. Then you take a sip and its just got layers upon layers of flavour that hit all corners of the palate. Its like yummy peaches and cream with just the subtlest hint of vanilla from the oak, and its so subtle, so excellent.
In the cellar its all about highlighting the quality of the fruit and the nuances of the terroir. Sebastien is extremely judicious with oak, preferring only stainless steel for the majority of his wines. He likes the taught, mineral driven style; the classic oyster shell and lemon peel but with Christophe the depth and complexity of the wines is kicked up several notches thanks to the excellent fruit he harvests.
