The barrel resting transforms the gins profile: cinnamon and warm spice on the nose, earthy and smoky on the palate, with the underlying botanical character of the original gin still present beneath the oak influence.
Old Grove is Cutwaters core gin a Pacific Northwest-inspired London Dry style with juniper, citrus, and floral botanicals. The 50-day charred oak rest is short enough to preserve the botanical character while adding measurable vanilla and wood spice. The resulting barrel-rested gin sits in a category between standard gin and whisky useful in cocktails that call for either, and worth sipping neat for gin drinkers who also drink whisky.
