Del Maguey Chichicapa is the original expression the first palenque Ron Cooper worked with when he founded Del Maguey Single Village Mezcal in 1995, establishing the village of San Baltazar Chichicapa in Oaxaca’s broad central valley as the archetypal example of traditionally made Espadin mezcal from the valley’s hot, dry growing conditions.
Chichicapa represents the classic broad valley character of Oaxacan mezcal the style made throughout the valley region since before industrial production, by a single family using methods unchanged for generations. The valley terroir produces Espadin with a different character than highland or sierra expressions earthier, warmer, and more directly agave-forward. As Del Maguey’s founding expression, Chichicapa is the reference point for the brand’s entire philosophy of single village provenance and traditional artisanal production.
