Madrecuixe belongs to the Karwinskii family of wild agaves related to Tobasiche and the upright cylindrical agaves that are fundamentally different in character from the rosette-shaped Espadin used for most mezcal. The plant’s mature pia produces a spirit with a distinctly different aromatic profile: green, tropical, and fresh rather than the earthier, smokier character of Espadin. Earth-roasted, fermented with only airborne microbes, and twice distilled in the original unblended Oaxacan handcrafted tradition, Madrecuixe is silky and elegant a medium-bodied wild agave mezcal that finishes long, dry, and clean.
