The foaming of Jabali is a genuine production challenge the chemical compounds that cause it are natural to the agave and cannot be removed without altering the spirit. The palenquero must manage the fermentation and distillation process carefully to work around the foaming at every stage. Del Maguey sources Jabali from the same producer responsible for Tobala, Tepextate, and Espadin Especial a maestro whose experience with rare wild agaves is among the deepest in the Del Maguey network. The resulting mezcal has a vividly bright acidity, sweet violets on the palate, and herbal tarragon complexity that is completely distinct from any other expression in the portfolio.
