Dingle Distillery was founded in 2012 in a converted sawmill on the southwest coast of Ireland, established as Ireland’s first artisan distillery. Distiller John McDougall designed a traditional copper pot still named “Oisn” specifically for the project, and the approach from day one was to create a London Dry gin that captured genuine Irish terroir. The botanical blend macerates for 24 hours before distillation, and the spirit then passes through a flavor basket in the neck of the still a second botanical addition that layers more nuance onto the final spirit. After distillation, the gin is cut using water drawn from the distillery’s own well, 240 feet underground.

What makes Dingle distinct is the combination of classic gin botanicals juniper, angelica, coriander alongside botanicals foraged from the Kerry countryside: rowan berry from mountain ash trees, fuchsia, bog myrtle, hawthorn, and heather. These Irish botanicals contribute a fresh, floral, slightly minty character that sits alongside the juniper rather than competing with it. At a blind tasting of over 400 gins from 20 countries at the 2019 World Gin Awards, Dingle took both World’s Best London Dry and the overall World’s Best Gin title.

  • Nose: Clean and bright piney juniper with mineral-tinged angelica, floral heather and fuchsia, and a cooling hint of fresh mint. Lemon and glac cherry emerge as it opens.
  • Palate: Juniper leads with classic authority before the Irish botanicals take over. Notes of blackberry jam, chamomile, and orange marmalade give way to a distinctive wave of mint and eucalyptus-like coolness. Coriander and black pepper add warmth and spice.
  • Finish: Medium-dry with lingering mint, green herbal notes, and a gentle warm glow from coriander. Crisp and clean through the close.
