For Romain and Damien, the creation of Domaine de l’Enclos Chablis 1er Cru Montmains leaves no room for chemicals. Neither before nor after. They only resort to sulfur once bottled, to ensure that Domaine de l’Enclos Chablis 1er Cru Montmains stands the test of time. As for the rest of the process, everything is done individually and with minimal intervention: it all starts with the harvest (by hand) when the grapes of Domaine de l’Enclos Chablis 1er Cru Montmains have reached optimal maturity; followed by the vibrating table (where lesser clusters are discarded); then comes pressing and fermentation (natural, using indigenous yeasts); and finally, aging on the lees.
