El Septimo’s Rare Cask Collection is defined by this single-estate wine cask finishing approach rather than generic wine barrels, each expression uses casks from a named Bordeaux chteau with its own classified status and character. Chteau Desmirail is a Grand Cru Class in Margaux, producing Cabernet Sauvignon-dominant wines with the structure, dark fruit, and elegance that characterizes the left-bank Mdoc appellation. The residual wine character from this specific estate transfers during maturation, providing a more identifiable and traceable finishing influence than anonymous wine cask usage. The 2004 distillation vintage represents over 20 years of Grande Champagne development before cask finishing.
