The idea for Olive Leaf Gin traces back to 2015, when Four Pillars collaborated with Santamana Destileria Urbana in Madrid on a small run called Cousin Vera’s Gin their first experiment with savory, olive-forward gin flavors. The spirit came and went quickly but confirmed the direction. After visiting Cobram Estate in Boundary Bend during olive harvest, the Four Pillars team realized that olive oil itself could be a botanical. What followed was a full year of trials before the recipe was finalized. The gin uses three types of cold-pressed extra virgin olive oil from the Picual, Hojiblanca, and Coratina varieties plus olive leaf tea harvested alongside the olives at Cobram Estate, which provides herbaceous green tea-like notes and light tannin.
Additional botanicals include rosemary and bay leaf from co-founder Cameron MacKenzie’s own garden, native Australian macadamia nuts and lemon myrtle, fresh local lemons, and juniper. The result is a gin that Wine Enthusiast scored 92 points, calling it a “cool, lightly mentholated” savory gin with rosemary, green olive, saline, and a zippy juniper finish. Four Pillars describes it as their antidote to citrusy gins built for Martinis and Gibsons above all else.
