In Fall 2019, we cooked a sweet mash of Panhandle white corn, soft red winter wheat, and two-row malted barley, fermented it in open air, and sent new make to fresh toasted and charred American white oakcompact 30-gallon barrels built to give the whiskey more contact with wood. Then we stepped back and let the Hill Country do its work.

Six summers of wild heat and cool nights pushed spirit deep into the oak and back again, carving structure and layering flavor you can see in the glass.
