Gimonnet-Gonet’sL’clatGrand Cru Ros is a blend of 93% Chardonnay and 7% Pinot Noir. Gimonnet-Gonet likes their ros with a high percentage of Chardonnay; for them, it keeps the wine zesty, pure and racy. All grapes are hand-harvested and fermented in stainless steel tanks, the wines undergo full malolactic conversion, and are aged for 6 months in a tank before undergoing 20 months of aging sur latte, then bottled with a dosage of 7 g/l. In the glass, the wine shows a light, iridescent pink color with a steady stream of tiny bubbles with aromas of crushed tart berries, chalk and roses. On the palate, the wine has a lovely, gentle acidity to match the soft, creamy mouthfeel and mousse. Flavors of salted citrus, muddled raspberry, red currant and river stones wash across the palate into an elegant and refined finish. Refreshing and easy to drink, enjoy this beautiful Ros Champagne with smoked salmon any way you like, grilled shrimp served with corn and peppers, or a crispy roast duck.
