The renowned “In Situ Team of maestro mezcaleros employ 100% Tobaziche (A. karwinskii), utilizing conventional practices the agave is cooked in a traditional earthen oven, then milled manually using wooden mallets and a mechanical crusher, followed by fermentation in open-air oak vats. It is distilled twice in traditional Filipino-style clay pot stills, maintaining an ‘alta gama’ purity with no adjustments. This mezcal captivates with complex aromas of copal, macadamia, snow pea hull, tahini, brown butter, mealy orchard fruit, grilled chicken skin, pumpkin seed, touches of asparagus, dark cherry, tobacco leaf, vanilla cream, and salted caramel. Produced in a limited batch of 100 liters at 51% ABV, this Tobaziche mezcal delivers a decadent blend of sweet and savory in a generous wave-like succession. Its oily texture and deep harvest flavors beckon instigate pairing inspirations, making it an ideal companion for cold-weather cuisine. A distinctive example of A. karwinskii subspecies, this Tobaziche in clay distillation is a rare treat.
