Cassis de Dijon carries a protected geographical indication specifying the blackcurrant varieties and minimum fruit content.
Crme de cassis is the essential ingredient in Kir (cassis + white Burgundy) and Kir Royale (cassis + Champagne) drinks whose origin in Dijon makes the geographical link between the liqueur and its cocktail applications historically appropriate. Marie Brizards Dijon expression uses cultivars grown in the Burgundy region and requires a minimum of 400g of blackcurrants per liter, producing the dense, deeply fruity character that distinguishes quality cassis from commodity versions.
