The 5th Edition’s Cognac barrel finishing adds the dried fruit, floral, and rancio character of aged French Cognac casks to Heaven Hill’s already complex high-rye bourbon base. Cognac is produced in the Charente region of France from Ugni Blanc grapes distilled and aged in French Limousin or Tronais oak the residual compounds in these barrels impart distinctly different characteristics than American oak or even sherry casks.
