They farm organically and intervene as little as possible, and Pro Fondo is their col fondo Glera: dry, savory and a little rustic in the best sense. Roll the bottle gently to stir the sediment, or pour it clear and let the last glass go murky. Either way it belongs on a table, not in a toast.
A rustic yet refreshing fizz with bright green apple, lemon peel, and crunchy pear. Fine lees give a gentle breaddough character, light herbal undertones, and a persistent, slightly cloudy minerality.
Pairing: Ideal as an aperitif, or with oysters, shellfish, seafood risotto, crudits, light tapas, or soft cheeses. Works beautifully with fresh Mediterranean-style appetizers.
