Used in rituals as far back as 300 A.D., Tequila has continually evolved and recently reached a quality that few of us would have dreamed of just a few decades ago. The Mexicans know how to produce a spirit unlike any other. In 1978 the Tequila Regulatory Council was formed, declaring what could carry the Tequila name. One category is Blanco, a clear spirit, rested no more than 60 days in stainless steel tanks to produce the rawest taste of agave that is distinctly Tequila.
