The 2005 vintage is the more assertive and complex of Plantation’s two readily available Jamaica single-vintage expressions. Distilled in 2005 from Long Pond and Clarendon two of Jamaica’s most historically significant pot still operations the rum spent a full twelve years aging in Jamaica before traveling to Chateau de Bonbonnet in Cognac for 12 additional years in former cognac casks. That extended tropical aging drives significant ester development: the specific fermentation conditions, dunder pit practices, and heat at Long Pond and Clarendon over twelve Jamaican summers create depth that shorter-aged Jamaica vintages cannot achieve.
Plantation describes this expression as highlighting the “ancestral Jamaican style” a reference to the long fermentation and 100% pot still distillation that defined Jamaican rum’s global reputation in the 18th and 19th centuries. No column still contribution, no shortcut to lightness.
