Where Zacapa 23 uses primarily American white oak ex-bourbon casks, the Edicion Negra passes through three different cask types: American whiskey barrels contribute vanilla, caramel, and spice; sherry casks add dried fruit, raisin, and the nutty oxidative character; Pedro Ximenez wine casks add concentrated sweetness, dark chocolate, and a molasses-like richness that gives the Negra its characteristic dark, smoky profile.
