Honey barrel finishing adds a specific layer of residual sweetness from the honey compounds absorbed into the wood staves, which then migrate into the bourbon during the finishing period. The result is a softer, honeyed character layered on top of Woodford’s triple pot still bourbon foundation distinct from the toasted oak influence of the Double Oaked or the experimental grain programs.
