Kavalan was founded in 2005 in the Yilan County of northeastern Taiwan, in the foothills of the Snow Mountain range. The distillery draws water from the mountain snowmelt and operates in a hot, humid climate where the angels share (evaporative loss) runs at 1215% annually three to four times the Scottish rate. The accelerated maturation means Kavalans 57-year-old whisky can carry the complexity that takes Scottish distilleries 1218 years to achieve.
